Luna Negra is a beautifully fresh goat’s milk cheese with a soft yet firm texture and a distinctive ash-coated rind. Made using vegetarian coagulant, this lactic-set cheese has a compact white paste with delicate cellary and mushroomy aromas. Its flavour combines mild, gently goaty notes with hints of raw almond, finishing fresh, light and pleasantly acidic.
