Ortiz Sardines a la Antigua in Olive Oil, 140g

Rich, intense flavor with a melt-in-the-mouth texture that only deepens with age. These sardines retain a delicate shimmer from their silver skin.

Ortiz sources its sardines from auction houses, or *lonjas*, along Spain's northern coast. Each fish is meticulously hand-beheaded and gutted, then gently washed in preparation for cooking.

The sardines are lightly fried in oil before being preserved in olive oil. The term *a la antigua* signifies that the silver skin remains intact, adding to their distinctive appearance and flavour.
